Counts espresso shots and reminds every N (default 40, GAGGIBOT_CLEAN_EVERY, 0 = off). The counter resets automatically when a backflush/descale/clean profile runs — the watcher now reports utility runs via an on_utility callback (plain water flushes do not reset). /status shows the current count.
